In addition to carbon, yeast also need nitrogen for growth. Nitrogen is a building block of enzymes, proteins, and amino acids. To replicate its genome, it needs nitrogen to have enzymes that reduce the cost of doing biological processes. Respiration requires a lot more nitrogen than fermentation does. So maybe nitrogen plays this big outsized role now.
