How to Start Fermenting Your Own Beer
Small batches can be really liberating and as you build confidence then depending on your context it might make sense to move to a larger batches. I would encourage almost anybody to start with fermenting vegetables. Eating vegetables is a wild fermentation where the organisms you need are already present on all vegetables. There's never been any case history of food poisoning or illness.
