The Origins of Aged Cheese
There are lots of different theories for why India did not develop aged cheeses. The only cheese that's indigenous to India is paneer, which is a soft cheese meant to be eaten fresh. Offerings of cheese were made to the gods in Sumerian and Greek religious texts. Around 1400 BCE, hit-type writing starts describing more types of cheese.
