When you chew nuts, that actually most of the fat from the nuts is remaining intact in the cell walls. So when we feed almonds, for example, to ileostomy patients, we still see that only about 60% of the fat is released. It's great food for your microbiome, which feeds away at the cell walls,. But that's why we know that the back-of-pack labeling overestimates the energy value by about 30% because it's just coming out. The end because of the way these cell walls are structured.
