People don't just learn individual words, they also learn larger patterns, which are chunks. So collocations are basically two word chunks. It's about knowledge of what is the appropriate context for a word so that you can see where that word is used. And as you become more proficient in a language, then you start to understand what kinds of words tend to come together.
