The Story of Shelf-Stable Bread
The first task of developing shelf-stable bread had actually started in the 1980s. Devcom wanted to use that bread to develop an MRE pocket, or a hot pocket like sandwich. The team sealed the bread in foil packaging while it was still warm. This creates a vacuum that reduces the amount of oxygen in the packaging. They also add a little iron packet, like the ones you see in a bag of chips - which absorbs any oxygen left over.
