Brian dott is professor of history and middle eastern studies at whitman college. He's the author of the chilly pepper in china, a cultural biography which was just published in may. Kaiser: What initially got you interested in studying the pepper and china to the point where you were willing toust spend what must have been thousands and thousands of hours just poring over arcane gaseteers and pharmacopias? Dott: I mean, that it was basic, somewhat cirumdipotous. So i knew, you know, in the back of my mind that the chilly peppers to the americas. It had to be introduced into china.
