Iso Alpha Acids Are Not Polar, Right?

Jordan: alpha acids are what are in hops. And they're non polar. So this is a very, very common thing that is measured whenever you're looking at hop quality. Heat, applying heat causes the alpha acid to change its structure like folding a piece of paper and then become more soluble,. which balances the beer. Jordan: What about beta acids?
