Is Process Meat So Bad for You?
Researchers used to think fibre was the main reason why leafy greens and other plants were healthy. But it turns out that fibre doesn't have strong correlations with health effects, but nitrates do. And if you eat a leafy green salad, you nitrates. Process meat has nitrates because it's preserved with them. When you heat up process meat, then n nitros compounds which are nitrogen containing compounds leads to worse heart health and a higher probability for coloreta cancer.
