I did not want to do a revolution. The wines my father made were good, there was no need to change everything. And so i felt like i could really have the teas show better by just nuanseing the wine making bit. I think most people would consider the wines we're making currently are more tanic than the wines we made in the eighties or nineties. Soiit doesn't rotate just around the whole cluster, the whole cluster fermentation, but it's a large component. But your cooperage is another big dish, a decision you can make. Um timing of mallows another big one,. And then there's a lot of small things.
