The Effects of Bitter Foods on Insulin Sensitivity

Bitter foods activate specific receptors in the mucosa of our intestines that then triggers those cells to release into the blood, a series of what are called intra-entricment hormones. Hormones lower inflammation, and they improve glucose tolerance. Our taste for bitter maybe is evolutionarily built in because we need more of those bitter substances to help promote the proper hormonal balance to regulate our blood sugar. All of these things play into the appropriate signaling of our body to use food as information in a way that promotes resilience.
