The Importance of Wild Fermentation

I really enjoyed reading wild fermentation as a start as an introduction to this realm of foods. I've only ever eaten homemade sauerkraut once and that was 25 years ago at this point. Fermentation is not rocket science. You don't need to know about microbiology in order to practice fermentation. It's also an infinite realm of human sort of practice and cultural information.
