Running economy is something you can tweak. You might be able to optimize get a little marginal gain on. It's not an assumption in VK or Everesting. The goal is get the most vert in the shortest period of time. And that those data point towards 30 degrees being the the optimal angle, if you want to maximize vertical ascent rate and that oxygen consumption is the limiting factor.
