Coffee Roasting Process
When we're first triggered a cup of coffee, at the temperature, we can start drinking it at. So what I my understanding was is that there's chlorogenic acids that during the roasting process change into lactones. Fewer acids, more acids are turning into actones. And then lactones turning into fennel in day. Yep.
