The Role of Grass in Brewing

In the United States, to get a yeast approved, it still has to be grass. So for grass evaluation, you're just establishing safety. You're making sure that the donor organism or wherever you're getting the DNA from is safe. The host organism, the one that you're going to be expressing it in is safe. It's just basic establishment of safety for toxicity, allergenicity, any sort of like potential hazard to a human that would be consuming that.
