The Lazani Method Is Like a Long Soak

The most important thing about whole bunch fermentation is what it does the texture of the wine. We don't want excessively green, stalky flavours and perfumes in our wine. The lazani method is like a long soak. When you do a hundred % whole bunch ferment, then it's quite dry to start off with. Early on, we press off, as i said before, before the ferments finished,. so we don't have a long post fermentation maceration either.
