Using un-malted wheat in this kind of pilsner and also trying to drive a very dry beer means you've got to be working some mash technique. The first batches that we did for us, it was like we initially released as an October Fesbier. We actually didn't like it because let's be frank, we're making a lager so we can have a nice light dry beer. And the concoction was not creating more body and sweetness because it's like an 11 and a half Play-Doh beer.
