The Importance of Intermittent Fasting

I've come up with the concept that the body only burns fat and it never burns sugar for energy and insulin resistance does not exist. I'm finding in maybe as a nutritional scientist that you have a lot more of knowledge than I do but I couldn't figure out why the body would burn sugar sometimes in fat the other times. Everyone has always in their cells of short chain medium chain long chain fatty acids always so there's always a cedal coa and ketones in the cytoplasm and mitochondria why would you use sugar right?
