The Role of Proteins in Cholesterol Delivery
Lipids go nowhere unless they're a passenger inside of a lipoprotein. Proteins are eminently water soluble. Certain proteins, depending on their amino acid makeup and their curvature, have a tremendous affinity to bind to lipids. If I had a macromolecule full of such proteins, full of cholesterol, phospholipids and triglycerides, what would I call that? Well, I'd call it a lipid delivery truck,. but science calls it a lipop protein.
