This chapter discusses early studies on the impact of fasting on the aging process, starting with experiments on calorie restriction and observing the benefits in blood pressure and cholesterol levels. It then delves into their research on yeast and how depriving them of food resulted in dramatic increases in lifespan. The chapter also explores the connection between fasting, nutrients, and genes in protection, particularly in relation to cancer.
