"Food is not stagnant or stationary. It has never been, right? It changes and evolves," she says. "We don't cook like we used to cook in the 1700s." The south was way more connected with the rest of the world than then say the Midwest or California for a long time; it's always been this dynamic place. But within that dynamic place, we have all sort of, for some reason, found our little comfort zones -- anything different from those comfort zones is seen as outside or threatening.
