Paula Fas: I would love a book that was how to run a kitchen. Instead of individual rec it would have individual recipes, but ike, think of the whole book as a recipe for your kitchen. Is there a food writer out there who you think really could carry a long form book? And just, you would love to see, just read more of that writer. "I'm tired of seeing the same names recycled," says Fas.
