The Origins of Yeast
As recently as the mid-1700s they thought yeast was not a living thing. The journal Nature says it's a famous Dutch scientist Antoni van Levenhoek. He observed yeast cells in the year 1680 but he decided those were globules and a fluid that were probably just starchy particles left over from brewing beer. Right. Just like take the little little bubbles or I don't know. Some someday I will seek out information about how the author of Harry Potter thought of this stuff, Daniel Radcliffe.
