The Importance of Air in Ice Cream

Air is lighter than the ingredients. To be a gallon of US ice cream, you have to weigh at least 4.5 pounds. The volume has to be no more than 50% air. UK regulations where they decrease the dairy and call it milk ice instead of ice cream.
