Lentils would be my top recommendation for diet expansion. Studies show 20ish percent reduction in all cause mortality with about 150 grams of cooked legumes a day. Even just eating three or four servings per week can have this big magnitude of benefit. They beat out most starchy vegetables even for nutrients per calorie. And there's a huge variety of studies showing that they are incredibly beneficial for the gut microbiome.
