What Is a Dosa?
Dosa is a crispy crepe made from fermented lentils and rice. You soak uradal and chana dal, along with short grain rice. Overnight, you drain the water, you grind it all down and you make the silky batter. There's also, there's one more very important ingredient, fenugreek seeds. It's quite bitter. I don't know if you ever use them, Tom, but they're quite bitter.
