Roasting Potatoes - A Variation on the Roasted Potato Technique
Thits kind of a variation on the british style of roast potatoes, where they quickly boil them and then shake them up. So they get roughfed up on the edges and lk, almost a thin layer of mashed potato forms on the outside. And then thatil chucked into a roasting pan where it's been preheating in the oven, and there's some really hot oil that some garlic has been infusing into. They get tossed around in that garlicky oil and roasted until they're super crisp.
