Tukupe is made from casava. Castava is atuber that is grown these days in tropical regions all around the world, but is believed to have originatedin the amazon. In certain soils, it grows with high levels of syanide and if people tried to eat un process tubers they could be quite poisonous or even kill them. The typical process is to grate the casava and then kind of ring it out and squeeze as much of the juice out of the grated tubers as possible. But the juice is fermented, and under the fermentation, the synide compounds break down into benign forms.
