Ultra processed is when a food doesn't resemble the original ingredients. It only contains extracts of those original ingredients that are put together in vast chemical factories to produce something tasty and palatable. So, corn on the cob is natural form, you stick on the barbecue, that's an unprocessed food. Once you take that corn and you make it into corn flakes, or you make itinto Doritos, it's ultra processed. And so it gets absorbed in your body really fast. You get a big sugar peak, get inflammation peaks, and it has a very different effect on your body to the whole food.
