The idea is to get people to eat more foods, find something interesting new you have to eat. Each one of them is a different species and even at the difference between say a purple carrot or an orange carrot, they have different chemicals in them. So subtle variations will keep many more species alive in your gut. It's a different way of thinking about food. And it's quite a fun way as well.
