The Importance of Dark Vinegar in Korean Cooking
In Korean cooking, you usually use white vinegar or like apple cider vinegar for rice vinegar. In China, mainland China, people like to use red vinegar for soup dumplings. It's a pretty specific vinegar. I only recently found out about the dark vinegar, maybe in college because Jay Zhang, our roommate, you said eat it a lot.
