Classic Versus New?
There are a lot of reasons to attempt a classic dessert, but historically I've found it emotionally easier to double down on making something same but different. There's a picture and an essay of a double cross fruit pie in the book, but there's no recipe for one. "You can't really compete with your vision and idea of what that's going to end up being like," she says.
