Using aged hops to a fresh beer can contribute like some of the some of those characters. "A little barley wine proves a little age is always is never, you know, sometimes can be a good thing," he says. Do you hold on to old barley wines for months or do you just drink them when they come in? I think it kind of cuts both ways. Like sometimes the hops work against it. Sometimes it really helps it.
