I love bulking out really rich creamy sauces with veggies because I must say I love a rich sauce. But if you did look at the breakdown, the nutritional analysis of something like that, it probably wouldn't be very conducive to weight loss. Just add a ton of broccoli or if you want to go an extra step, maybe swap out the cream for yogurt or creme fresh or something like that,. The difference can be massive, but actually the taste can be very, very similar. Losing weight is a linear process. Our bodies are not machines. There's so many factors that are going to affect that.
