Salad kind of came about because i had these amazing purple snow peas i was growing in my garden. To me, it's like the embodiment of spring and i didn't want to take away from that. So i decided to add radish, because radish has that really bright, a peppery bite. When it's sliced really, really thinly and put in an ice bath, it's going to add just a hint of that peppery flavor.
