Cascatelli - The First Time in 13 Months
The first run of cascatelli is set for february eighteenth, 20 21. But a week before the big production day, i get a call from steve volini saying he's having issues getting the dough to flow evenly. I'm going to houn it out a little to morrow myself, and we shall be shipping there inseson. So i take a cove test, pack my bags and make the three hour drive up to spolini. It's been 13 months since our first visit. We have a name. The boxes are ordered.
