What's the Difference Between Restaurant and Catering?
In catering there really is no house. It's a different house every night. You have to understand and maybe you already know this implicitly like everyone's going to be served at about the same time. That's the expectation within about 15 minutes. And so what kinds of demands is that place on the kitchen? There's typically no running water, rarely electricity and certainly in New York City no propane allowed. So it's this kind of improvisational two hands tied behind your back kind of cooking that argues for a certain type of person.
