The Life of a Chef

I created dishes such as the popiat wrapped in crispy potatoes. That dish still at Cafe Boulieu in New York. A 36 years letter and still the most popular dish on the menu. And so to me I've created amazing classic dishes there who has been, which we still take pleasure at redoing. So in a way it's not all about creativity because when you create a new classic you have to think about creativity and technique and consistency. But after when it becomes such a success a dish then it becomes eternally classic.
