How Do You Protect Your Wine From Oxygen?

The tiles are molecules that are bound to sugar inside the grapes and they have to be revealed during the winemaking process. To reveal those aromatics there is a nice balance between oxidation and reduction that has to be found so bring oxygen or eliminating oxygen in contact with the wine. Temperature, fermentation, temperature management is also quite important to make sure you don't volatilize the esters during the fermentation. The use of screw cap to make sure that the containers are bottling is sealed and no further oxygen is introduced during the aging of the wine.
