The Role of Genetically Modified Yeast in Brewing
In non-food applications, genetically modified yeast actually do specifically genetically modified saccharomyces cereciate play a huge role in other industries like pharmacology and the pharmaceutical industry. It's kind of only recently that we're now sort of moving these into a more, I guess, visible spotlight in terms of use. That being said, I don't think that conventional strains will go anywhere. Part of the technology that helped develop the capabilities to do easy and reliable genetic modifications can also be used for rapid sequencing and identification of specific markers and specific traits that you want for breeding applications. This will play directly into marker assisted breeding programs for producing hybridized yeast and things.
