I Don't Want Them to Waste Their Scallops on Me
Wedding to be held in mid-June, with around a hundred guests. We'd like to do a fish slash sea food entree - but we don't have raw bar money. The problem with doing the standard stff is about choosing recipes that can tolerate abuse. Choose fish that cano take a beating d and still still be fine. Skate's one of the few fishes you can beat the hell out of and not you'll have it be ok. What do you think? Yes, i whonder if you could do, like, a salt bake fish, like per table.
