David Bird wrote the original Understanding Wine Technology in 2000. The book was picked up by WACT and a few other education programs as an approachable guide to wine technology. When David did his research paper on it, he realized that Dave had never read the book. He asked him if he could help rewrite the fourth edition of the book with some changes. It's been one of the bestseller vulgarization books in the wine world.
