Polyphenols Are a Part of the Defense Mechanism of Plants
Polyphenols are part of the defense mechanism of plants. When they, you know, have a harsher life, those are actually going to accumulate more within the plant. Food manufacturers can now manipulate some foods and plants to produce more polyphenols. They get like 30% more polyphenol growth in those plants because they feel that they need more defenses.
