The Benefits of Phytic Acid

The reason American wheat is not edible anymore is that about two weeks before harvest, they spray the entire crop with glyphosate to kill the plants. Glyphosate is a mineral chelator like phytic acid. It will stick to the minerals in wheat and stop you and stop the wheat from using the minerals. So what I think you want to do is look at, okay, you want to eat something that's delicious. Yes, sourdough is a good way to do it. But if you just like grains, rye has a lot less phytic Acid than wheat. You would get European rye and you would ferment it because fermentation will also break down phytic acids.
