Starchy carbohydrates can inhibit cortisol. This could be through the tryptophan amino acid related pathway that ratchets up to serotonin release, probably some other things too. Cortisol at its core is an energy signaling molecule. It says we are in the need for energy. Epinephrine's the same way. We don't need to be liberating free fatty acids and preparing the need for fuel.
