I would look at my first menus and think, oh, God, that sounds dreadful. I remember once we had a dish on the menu, which my head chef wanted to put on. It's called oysters mornae and it's basically cooked oysters under a cheese sauce. Well, I mean, what a crime. I don't even put vinegar on them. I just swallow them as they are. And traditionally, oysters used to go into steak and give me pies and things to bulge them up. Sure, sure, sure. Just extra protein. And it was just a cheap way. Cheaper than the steak.
