There's plenty of data showing that when you swap saturated calories from saturated fat for an equal number of calories from unsaturated fats, you increase insulin sensitivity. I think it's a lot easier to do a low carb diet in that way than it is to do one that's rich in unsaturated fats. For growing children who just calorie density could be an issue and it's harder for them to get enough calories, having more of those oils and higher-fat foods can be really beneficial.
