The De-Skilled Meat Industry
The craft of butchery is just not practiced. There's a need in the industry to have more butchers being trained. You've got to know everything from soup to nuts on four or five different kinds of animals and how to, and how to maximize that. The only way to learn how to cut me is to go watch somebody do it and have them tell you how they're doing it. And I think this is a problem in just farming in general and ranching in general. So many farmers are losing their voice because there aren't very many people who can take their place.
