The Shortest Definition of Fermentation
The shortest definition of fermentation is the transformative action of microorganisms. When we ferment a food it's because we allow tiny organisms to do something to it usually either a bacteria or a yeast. Yeast eats sugars and generates these two main byproducts carbon dioxide and ethanol. It also sometimes makes a broad category of stuff called flavor molecules which are what make up our taste buds.
