Do You Feel Like You Can Taste the Yeast?
Eating coffee berries is, for me, the best way to appreciate coffee. And my dream is making brewed drip coffee kind of come as close as possible to the experience of eating the fruits. Tasted many of these, like yeast fermented, yeast treated, like where we're actually inoculating with yeast. Do you feel like you can taste the yeast? Ah, sometimes when the fermentation is still a bit too light, or it went maybe too slow, you get this kind of pulpy, undefined fruit flavor which is one of the things i don't like that much.
